Roasted Beet & Pear Salad



This roasted beet and pear salad that is free of gluten is full of great flavors and textures. The sweet roasted beets and pears go well with the sour balsamic dressing, and the crunchy walnuts make the whole thing more satisfying. It's a tasty and healthy salad that will impress everyone!

Ingredients:

  • 3 medium beets, peeled and cubed
  • 2 pears, thinly sliced
  • 4 cups mixed salad greens
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

Turn on the oven and heat it up to 400F 200C

Mix the cubed beets with salt, pepper, and 1 tablespoon of olive oil

Place the beets on a baking sheet and roast them for twenty to thirty minutes, or until they are soft

To make the dressing, mix the honey, balsamic vinegar, and the rest of the olive oil in a small bowl with a whisk

The roasted beets, sliced pears, mixed greens, walnuts, and feta cheese should all be put in a large salad bowl

Pour the dressing over the salad and gently toss it to coat it

Serve right away and enjoy!
