Paleo Smoked Salmon Scramble



This Paleo smoked salmon scramble is a delicious and protein-packed breakfast option. The creamy coconut milk adds richness while the smoked salmon adds a savory flavor. It's quick and easy to make, perfect for busy mornings or lazy weekend brunches.

Ingredients:

  • 6 large eggs
  • 1/4 cup full-fat coconut milk
  • 4 ounces smoked salmon, chopped
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon ghee or coconut oil
  • Salt and pepper to taste

Instructions:

In a bowl, whisk together the eggs and coconut milk until well combined

Stir in the chopped smoked salmon and chives

Heat ghee or coconut oil in a skillet over medium heat

Pour the egg mixture into the skillet and let it cook without stirring for a minute or two until the edges begin to set

Using a spatula, gently push the cooked edges toward the center, allowing the uncooked eggs to flow to the edges of the skillet

Continue cooking, gently stirring occasionally, until the eggs are set but still moist

Season with salt and pepper to taste

Serve hot and enjoy!

Gluten-Free Mayo-Free Deviled Eggs



You can make these deviled eggs without mayonnaise or gluten, and they taste great. Greek yogurt is used instead of mayonnaise because it is healthier.

Ingredients:

  • 6 hard-boiled eggs
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Paprika for garnish

Instructions:

Peel the hard-boiled eggs and slice them in half lengthwise

Carefully remove the yolks and place them in a bowl

Mash the egg yolks with a fork until they are smooth

Add the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper to the mashed egg yolks

Mix until well combined

Spoon or pipe the yolk mixture back into the egg white halves

Sprinkle paprika over the filled eggs for garnish

Refrigerate for at least 30 minutes before serving

Shrimp Mango Avocado Lime Salad



This is a healthy and refreshing salad with shrimp that tastes great and is made with mangoes, avocados, lime, and lime juice. This dish is great for summer meals or any time you want a burst of fresh flavors.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 ripe mangoes, diced
  • 2 ripe avocados, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Mixed salad greens for serving

Instructions:

Put shrimp, mangoes, avocados, bell pepper, red onion, and cilantro in a large bowl

Mix olive oil, lime juice, salt, and pepper in a small bowl with a whisk

Add the dressing to the shrimp and toss it around gently to coat

Put it in the fridge for at least 30 minutes with the lid on to let the flavors mix

Enjoy it on top of a mixed salad greens
