Experience the exotic blend of Middle Eastern spices in this vegan, gluten-free, and paleo-friendly BBQ recipe. Perfectly grilled tofu and vegetables with a rich and aromatic spice mix.
Ingredients:
- 2 tbsp ground cumin
- 2 tbsp ground coriander
- 1 tbsp smoked paprika
- 1 tbsp ground cinnamon
- 1 tbsp ground turmeric
- 1 tsp cayenne pepper
- Salt and pepper to taste
- 1 block firm tofu, pressed and sliced
- 1 large eggplant, sliced
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- Olive oil for brushing
Instructions:
Preheat the grill to medium-high heat
In a bowl, mix cumin, coriander, paprika, cinnamon, turmeric, cayenne, salt, and pepper to create the spice mix
Brush tofu, eggplant, zucchini, and bell peppers with olive oil
Rub spice mix on both sides of tofu and vegetables
Grill tofu and vegetables for 5-7 minutes per side or until grill marks appear and they are cooked through
