Ingredients:
- 2 cups pitted dates
- 1/2 cup almonds
- 1/4 cup rolled oats
- 1/4 cup shredded coconut
- 1/4 cup cocoa powder
- 1/4 cup almond butter
- 1/4 cup dark chocolate chips
- 1 tbsp coconut oil
Instructions:
In a food processor, blend dates, almonds, oats, shredded coconut, cocoa powder, and almond butter until a sticky dough forms
Roll the mixture into small balls and place them on a baking sheet lined with parchment paper
Place the baking sheet in the freezer for 15-20 minutes to firm up the balls
In a microwave-safe bowl, melt dark chocolate chips and coconut oil in 30-second intervals until smooth
Dip each energy ball into the melted chocolate mixture, ensuring it's fully coated
Return the coated balls to the parchment-lined baking sheet and place them back in the freezer for another 10-15 minutes until the chocolate hardens
Once set, transfer the energy balls to an airtight container and store them in the refrigerator until ready to serve
