Chocolate Hazelnut Teff Cookies



These vegan cookies are rich and delicious, with flavors of chocolate and hazelnut. These cookies are tasty and good for you because they are made with teff flour, cocoa powder, and coconut sugar.

Ingredients:

  • 1 cup teff flour
  • 1/2 cup cocoa powder
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond milk
  • 1/4 cup chopped hazelnuts
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup dairy-free chocolate chips

Instructions:

Preheat oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine teff flour, cocoa powder, coconut sugar, baking powder, and salt

Add melted coconut oil, almond milk, and vanilla extract to the dry ingredients

Mix until well combined

Fold in chopped hazelnuts and dairy-free chocolate chips

Scoop cookie dough onto the prepared baking sheet, leaving space between each cookie

Bake for 10-12 minutes, or until the edges are set

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
