Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 12 marshmallows
- 1/2 cup semisweet chocolate chips
Instructions:
Warm up the oven to 350F 175C and put paper liners in a cupcake pan
Mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt together in a large bowl
Add the milk, eggs, vegetable oil, and vanilla extract to the items that are already dry
Mix the batter well and until it is smooth
Melt the butter in a different bowl and mix the graham cracker crumbs in it until the crumbs are covered
Put a tablespoon of the graham cracker mix into each cupcake liner to make the base of the cupcake
Cover the graham cracker base with the chocolate cupcake batter
Fill up each liner about two-thirds of the way to the top
In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Put a marshmallow in the middle of each cupcake while they are still warm, and then put them back in the oven for another two to three minutes, or until the marshmallows are just barely toasty
After taking the cupcakes out of the oven, let them cool in the pan for a few minutes
Then, move them to a wire rack to finish cooling
You can use a double boiler or the microwave to melt the semisweet chocolate chips
Last but not least, drizzle the melted chocolate over the cupcakes
