Ingredients:
- 4 chicken breasts, boneless and skinless
- 4 large potatoes, sliced thinly
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/4 cup olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
Preheat the oven to 375F 190C
In a small bowl, mix olive oil, paprika, thyme, rosemary, minced garlic, salt, and pepper
Place the sliced potatoes and onions in a large mixing bowl
Pour half of the seasoned olive oil mixture over the potatoes and onions, tossing to coat evenly
In a baking dish, arrange the seasoned potatoes and onions evenly as the bottom layer
Place the chicken breasts on top of the potatoes and onions in the baking dish
Drizzle the remaining seasoned olive oil mixture over the chicken breasts
Cover the baking dish with foil and bake for 30 minutes
Remove the foil, sprinkle shredded cheddar cheese over the chicken breasts, and bake uncovered for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly
Serve hot and enjoy!
