Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsweetened almond milk
- 1/3 cup vegetable oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1/2 cup dairy-free chocolate chips optional
- Cooking spray or oil for greasing the pan
Instructions:
In a mixing bowl, combine the flour, cocoa powder, sugar, baking soda, and salt
Add almond milk, vegetable oil, apple cider vinegar, and vanilla extract to the dry ingredients
Mix until well combined
Fold in the dairy-free chocolate chips if using
Grease a 7-inch round cake pan that fits into your Instant Pot
Pour the batter into the greased pan
Add 1 cup of water to the Instant Pot and place the trivet inside
Carefully lower the cake pan onto the trivet
Close the Instant Pot lid and set the valve to sealing
Cook on high pressure for 35 minutes
Allow the pressure to naturally release for 10 minutes, then do a quick release
Carefully remove the cake pan from the Instant Pot and let it cool on a wire rack
Once cooled, carefully remove the cake from the pan and serve
